Method
- Preheat oven to 350°F (175°C) and line a 9-inch cake pan with parchment paper.
- Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl.
- Mix maple syrup, Greek yogurt, oil, eggs, and vanilla until smooth in another bowl.
- Gradually add the wet ingredients to the dry ingredients, stirring gently.
- Fold in grated carrots, nuts, and raisins (if using).
- Pour batter into the cake pan and bake for 30-35 minutes, until a toothpick inserted in the center comes out clean.
- Let cool for 10 minutes, then remove from pan and let cool completely before frosting.
Notes
For a richer flavor, consider adding a cream cheese frosting.
