Ingredients
  

Dry Ingredients
  • 2 cups whole wheat flour or almond/oat flour for gluten-free
  • 1.5 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp salt
Wet Ingredients
  • 0.5 cup maple syrup or honey
  • 0.33 cup Greek yogurt or applesauce
  • 0.5 cup coconut oil or olive oil
  • 2 large eggs or flax eggs for vegan
  • 1 tsp vanilla extract
Add-ins
  • 2 cups grated carrots
  • 0.5 cup chopped walnuts or pecans (optional)
  • 0.25 cup raisins or shredded coconut (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line a 9-inch cake pan with parchment paper.
  2. Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl.
  3. Mix maple syrup, Greek yogurt, oil, eggs, and vanilla until smooth in another bowl.
  4. Gradually add the wet ingredients to the dry ingredients, stirring gently.
  5. Fold in grated carrots, nuts, and raisins (if using).
  6. Pour batter into the cake pan and bake for 30-35 minutes, until a toothpick inserted in the center comes out clean.
  7. Let cool for 10 minutes, then remove from pan and let cool completely before frosting.

Notes

For a richer flavor, consider adding a cream cheese frosting.
