Ingredients

  • 2 pieces ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips
  • 1/4 cup chopped walnuts (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet.
  2. Mix mashed bananas, melted coconut oil, honey, and vanilla until combined.
  3. Whisk together flour, baking soda, baking powder, and salt.
  4. Combine dry and wet ingredients; fold in chocolate chips and walnuts.
  5. Scoop dough onto baking sheet; bake 10-12 minutes until edges are golden.
  6. Cool cookies on a wire rack before serving.

Notes

For softer cookies, slightly underbake and cool on the sheet.
