Ingredients
  

Dry ingredients
  • 1 ½ cups rolled oats
  • ½ cup vanilla protein powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
Wet ingredients
  • 2 large eggs
  • 1 cup plain Greek yogurt
  • ¼ cup maple syrup or honey
  • ¼ cup milk (any kind)
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup fresh or frozen blueberries
  • 2 tablespoons oats for topping (optional)

Method
 

  1. Preheat oven to 180°C (350°F) and prepare muffin tin.
  2. Mix dry ingredients in a bowl.
  3. Whisk wet ingredients separately.
  4. Combine wet and dry, fold in blueberries, and fill muffin cups.
  5. Bake for 20-25 minutes, cool, and serve.

Notes

For extra flavor, sprinkle oats on top before baking.
