Method
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Mix mashed bananas, eggs, honey, Greek yogurt, melted coconut oil, and vanilla until smooth.
- Whisk together flour, baking soda, baking powder, salt, and cinnamon.
- Combine dry and wet ingredients; fold in nuts if using. Pour into pan.
- Bake for 50-60 minutes; cool before slicing.
Notes
For extra flavor, add a dash of nutmeg or a handful of chocolate chips.
