  • 3 pieces ripe bananas, mashed
  • 2 large eggs
  • 0.25 cup honey or maple syrup
  • 0.25 cup plain Greek yogurt
  • 0.25 cup coconut oil, melted or any mild oil
  • 1 teaspoon vanilla extract
  • 1.5 cups whole wheat flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.25 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix mashed bananas, eggs, honey, Greek yogurt, melted coconut oil, and vanilla until smooth.
  3. Whisk together flour, baking soda, baking powder, salt, and cinnamon.
  4. Combine dry and wet ingredients; fold in nuts if using. Pour into pan.
  5. Bake for 50-60 minutes; cool before slicing.

Notes

For extra flavor, add a dash of nutmeg or a handful of chocolate chips.
