  • 2 pieces ripe bananas, mashed
  • 2 large eggs
  • 0.25 cup honey or maple syrup
  • 0.25 cup coconut oil, melted
dry ingredients
  • 2 cups almond flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp vanilla extract
  • 0.5 tsp ground cinnamon (optional)

  • 0.5 cup walnuts or chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, eggs, honey, melted coconut oil, and vanilla until combined.
  3. Whisk almond flour, baking soda, salt, and cinnamon.
  4. Combine wet and dry ingredients, then fold in nuts or chocolate chips.
  5. Pour batter into pan and bake for 50-60 minutes until a toothpick comes out clean.
  6. Cool in pan for 10 minutes, then transfer to wire rack to cool completely.
