Ingredients
  

Dry ingredients
  • 1.5 cups rolled oats
  • 0.5 cup vanilla protein powder
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
Wet ingredients
  • 2 large eggs
  • 1 cup plain Greek yogurt
  • 0.25 cup maple syrup or honey
  • 0.25 cup milk any kind
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup fresh or frozen blueberries
  • 2 tablespoons oats for topping optional

Method
 

  1. Preheat oven to 180°C (350°F) and prepare muffin tin.
  2. Mix dry ingredients in a bowl.
  3. Whisk wet ingredients in a separate bowl.
  4. Combine wet and dry, fold in blueberries, and divide batter into muffin cups.
  5. Sprinkle oats on top if desired and bake for 20-25 minutes. Cool and serve.

Notes

Use ripe bananas for extra flavor and moisture.
