  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups gluten-free all-purpose flour
  • 1 cup fresh or frozen blueberries

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas and melted coconut oil until combined.
  3. Add honey, eggs, vanilla, lemon zest, and lemon juice; stir until smooth.
  4. Whisk together gluten-free flour, baking soda, and salt.
  5. Combine dry and wet ingredients; fold in blueberries.
  6. Pour batter into pan and bake 50-60 minutes; cool before serving.

Notes

Use ripe bananas for best flavor and mash well.
