  • 3 ripe bananas ripe bananas

  • 1/3 cup oil (vegetable, canola, or melted coconut) oil
  • 1/2 cup sugar (white or brown) sugar

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mash bananas, then mix in eggs, oil, sugar, and vanilla.
  3. Add flour, baking soda, salt, and cinnamon; stir until just combined.
  4. Fold in chocolate chips or nuts, if using. Pour batter into pan.
  5. Bake for 50-60 minutes, cool, then slice and serve.

Notes

Use ripe bananas for best flavor and sweetness.
