- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mix mashed bananas and coconut oil until combined. Add honey, eggs, vanilla, lemon zest, and juice; stir smooth.
- Whisk gluten-free flour, baking soda, and salt. Gradually add dry to wet, mixing until just combined.
- Gently fold in blueberries. Pour batter into pan and spread evenly.
- Bake for 50-60 minutes until a toothpick comes out clean. Cool in pan 10 minutes, then transfer to wire rack.
