Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups gluten-free all-purpose flour
  • 1 cup blueberries fresh or frozen

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas and coconut oil until combined. Add honey, eggs, vanilla, lemon zest, and juice; stir smooth.
  3. Whisk gluten-free flour, baking soda, and salt. Gradually add dry to wet, mixing until just combined.
  4. Gently fold in blueberries. Pour batter into pan and spread evenly.
  5. Bake for 50-60 minutes until a toothpick comes out clean. Cool in pan 10 minutes, then transfer to wire rack.

Notes

Use ripe bananas for best flavor and sweetness.
