Sweet Potatoes
  • 3 large sweet potatoes about 2 pounds, peeled and cubed
  • ½ cup unsalted butter melted
  • ½ cup granulated sugar
  • ½ cup heavy cream
  • 4 large eggs separated
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ¼ teaspoon ground cinnamon optional

Method
 

  1. Boil, peel, and mash sweet potatoes until smooth. Let cool slightly.
  2. Mix mashed sweet potatoes with melted butter, sugar, cream, vanilla, salt, and cinnamon until creamy.
  3. Beat egg whites until stiff peaks form.
  4. Gently fold egg whites into the sweet potato mixture until combined and airy.
  5. Preheat oven to 350°F (175°C). Butter a soufflé dish, pour in mixture, and bake for 35–40 minutes.
  6. Serve warm for a light, fluffy texture.

Ensure not to overbeat egg whites to keep the soufflé airy.
