Method
- Preheat oven to 350°F (175°C). Line a muffin tin.
- Whisk together dry ingredients in a large bowl.
- Whisk together wet ingredients in a separate bowl.
- Add wet to dry and mix until just combined.
- Fold in carrots and nuts (if using).
- Divide batter among muffin cups.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Cool in the tin before transferring to a wire rack.
Notes
For extra moisture, add a tablespoon of applesauce to the batter.
