- Preheat oven to 350°F (175°C) and prepare a loaf pan.
- Mix mashed bananas, eggs, almond butter, honey, and vanilla until smooth.
- Stir in cinnamon, baking soda, salt, oats, and fold in nuts or chocolate chips if desired.
- Pour batter into pan and bake for 40–45 minutes until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
