  • 2 cups all-purpose flour
  • 1 cup honey
  • 1 cup brown sugar
  • 1/2 cup ground almonds
  • 1/4 cup unsweetened cocoa powder
  • 1 tablespoon baking powder
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup candied citrus peel (optional)
  • 1/2 cup chopped nuts (optional)
Icing
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet.
  2. Mix honey and brown sugar, then add egg and combine.
  3. Whisk together dry ingredients and gradually add to wet mixture to form dough.
  4. Fold in citrus peel and nuts if using, then shape dough into small balls and flatten.
  5. Bake for 15-18 minutes, cool, then drizzle with lemon icing.
