Ingredients
  

Wet ingredients
  • 1 cup pumpkin puree
  • 2 large eggs
  • 8 tbsp unsalted butter, softened
Dry ingredients
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 tsp pure vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp table salt
  • 1 tsp ground cinnamon

Method
 

  1. Beat eggs and soften butter; set aside.
  2. Add pumpkin, eggs, and butter to bread pan outside the machine.
  3. Mix in flour, sugars, vanilla, baking soda, baking powder, salt, and cinnamon on top.
  4. Place pan in bread machine, select 'Sweet Quick Bread' or 'Cake' setting, and start baking.
  5. Once done, remove pan, let rest for 10 minutes, then cool on wire rack before slicing.

Let the bread cool completely before slicing for best results.
