Method
- Preheat oven to 350°F (175°C). Spray a 9" loaf pan with cooking spray.
- Process oats in a blender until half their size. Mix with dry ingredients in a bowl.
- Blend bananas until smooth. Add eggs, vanilla, and oil; pulse to combine.
- Combine wet and dry mixtures; fold in walnuts if using. Pour into pan.
- Bake for 45-50 minutes until a tester comes out clean. Cool before slicing.
