Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
Mayonnaise
  • 1 cup mayonnaise
Sugar
  • 1 cup sugar
Vanilla Extract
  • 1 teaspoon vanilla extract
All-purpose Flour
  • 2 cups all-purpose flour
Baking Soda
  • 1 teaspoon baking soda
Salt
  • 1/2 teaspoon salt
Chopped Nuts (optional)
  • 1/2 cup chopped nuts optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, mayonnaise, sugar, and vanilla until combined.
  3. Whisk together flour, baking soda, and salt.
  4. Combine dry ingredients with banana mixture; fold in nuts if using.
  5. Pour batter into pan, smooth top, and bake 60-70 minutes.
  6. Cool for 10 minutes, then transfer to wire rack to cool completely.

Notes

Using mayonnaise adds moisture and richness to the bread.
