Bananas
  • 3 ripe bananas, mashed
  • 1 cup mayonnaise
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, mayonnaise, sugar, and vanilla until combined.
  3. Whisk together flour, baking soda, and salt; add to banana mixture and stir.
  4. Fold in nuts if using, then pour batter into pan.
  5. Bake for 60-70 minutes; cool before slicing.
