Bananas
  • 3 pieces ripe bananas, mashed
  • 1/3 cup vegetable oil
  • 1/2 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas with oil, then add sugar, egg, and vanilla.
  3. Stir in baking soda and salt, then fold in flour until just combined.
  4. Pour batter into pan and bake for 60-65 minutes.
  5. Cool in pan for 10 minutes, then transfer to wire rack.
