Double Chocolate Banana Bread

Ingredients
  

Dry ingredients
  • 1 1/4 cups all-purpose flour spooned and leveled
  • 1/2 cup unsweetened natural cocoa powder not Dutch process
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup semi-sweet chocolate chips
Topping
  • 2 tablespoons semi-sweet chocolate chips for topping
Wet ingredients
  • 1/2 cup unsalted butter softened to room temperature
  • 3/4 cup granulated sugar
  • 2 large eggs at room temperature
  • 1/4 cup plain yogurt or sour cream at room temperature
  • 1 1/2 cups mashed ripe bananas about 4 medium or 3 large
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons hot water

Method
 

  1. Preheat oven to 350°F (177°C) and grease a 9×5-inch loaf pan.
  2. Mix dry ingredients and stir in 3/4 cup chocolate chips.
  3. Cream butter and sugar, add eggs, yogurt, bananas, and vanilla.
  4. Add dry ingredients and hot water; mix until just combined. Pour into pan and sprinkle remaining chips.
  5. Bake for 60-65 minutes, cool before slicing.

Notes

Use ripe bananas for best flavor and moisture.
