Ingredients

  • 2.2 lbs chicken breasts
  • 1/2 cup fat free greek yogurt, unsweetened
  • 1/4 cup fat free milk
  • 1/4 cup sun dried tomatoes
  • 2 cups spinach
  • 1/4 cup parmesan cheese, shredded
  • 2 cloves garlic, minced
  • 2 tsp Italian seasoning
  • to taste salt
  • to taste black pepper

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Season chicken with Italian seasoning, salt, and pepper. Brown in a skillet until golden, about 1-2 minutes per side.
  3. Mix Greek yogurt, milk, minced garlic, salt, and pepper in the same skillet. Add sun-dried tomatoes and place chicken on top.
  4. Sprinkle Parmesan cheese over chicken, then bake for 10 minutes. Flip chicken, bake another 10 minutes, then add spinach for last 5 minutes.

Notes

Use fresh spinach for best results and adjust seasoning to taste.
