Method
- Preheat oven to 350°F (175°C).
- Season chicken with Italian seasoning, salt, and pepper. Brown in a skillet until golden, about 1-2 minutes per side.
- Mix Greek yogurt, milk, minced garlic, salt, and pepper in the same skillet. Add sun-dried tomatoes and place chicken on top.
- Sprinkle Parmesan cheese over chicken, then bake for 10 minutes. Flip chicken, bake another 10 minutes, then add spinach for last 5 minutes.
Notes
Use fresh spinach for best results and adjust seasoning to taste.
