Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
Dairy
  • 1 cup Greek yogurt
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Baking soda and dry ingredients
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon cinnamon (optional)
Add-ins
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, Greek yogurt, sugars, eggs, and vanilla until smooth.
  3. Whisk together baking soda, salt, flour, and cinnamon.
  4. Combine dry ingredients with wet mixture; fold in nuts or chocolate chips if desired.
  5. Pour batter into pan, bake for 50-60 minutes, cool before serving.

Notes

For extra flavor, add a dash of cinnamon or top with nuts before baking.
