  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
Wet ingredients
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
Filling
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 1 teaspoon pumpkin spice (for filling)

Method
 

  1. Preheat oven to 350°F (175°C) and line a 15x10 inch pan with parchment.
  2. Mix dry ingredients; beat eggs and sugar, then add pumpkin and vanilla.
  3. Combine wet and dry, pour into pan, and bake 15-20 mins.
  4. Cool, then unroll cake, spread whipped cream, and re-roll.
  5. Wrap in plastic, refrigerate 1 hour, then slice and serve.

Notes

Ensure the cake is completely cooled before unrolling to prevent cracking.
