  • 1/2 cup granulated sugar
  • 3/4 cup water
  • 3 large egg yolks
  • 2 tbsp unsalted butter

Method
 

  1. Combine cranberries, water, and sugar in a saucepan; simmer for 10 minutes.
  2. Blend the mixture until smooth, then push through a sieve if needed.
  3. Whisk egg yolks into the cranberry mixture, then cook over medium heat until thickened.
  4. Remove from heat, stir in butter until melted, then cool before storing.
