  • 3 pieces ripe bananas
  • 4 large eggs
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
dry ingredients
  • 1/2 cup coconut flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mash bananas, then mix in eggs, honey, coconut oil, and vanilla.
  3. Combine coconut flour, baking soda, salt, and cinnamon.
  4. Gradually add dry ingredients to wet, stir until just combined.
  5. Pour batter into pan, bake for 45-55 minutes, cool before serving.
