Classic Spaghetti Carbonara

Ingredients
  

Pasta
  • 400 grams spaghetti
  • 150 grams pancetta diced
  • 3 large eggs
  • 50 grams Parmesan cheese grated
  • 1 tsp black pepper freshly ground
Salt
  • 1 tsp salt for pasta water

Method
 

  1. Cook spaghetti in salted boiling water until al dente, then drain.
  2. Cook pancetta in a skillet until crispy.
  3. Whisk eggs and Parmesan in a bowl.
  4. Combine hot pasta with pancetta, then remove from heat and stir in egg mixture.
  5. Season with black pepper and serve immediately.

Notes

Use freshly grated Parmesan for best flavor.
