  • 3 pieces very ripe bananas (mashed) about 1½ cups mashed
  • 0.5 cup unsalted butter (melted or softened)
  • 0.75 cup sugar (granulated or brown)
  • 2 large eggs (beaten)
  • 1 tsp vanilla extract (optional)
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 tsp ground cinnamon (optional)
  • 0.5 cup chopped walnuts (toasted)
  • 0.5 cup raisins

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. Mash bananas, then stir in butter, sugar, eggs, and vanilla.
  3. Mix flour, baking soda, salt, and cinnamon. Fold into wet ingredients.
  4. Stir in walnuts or raisins, then pour batter into pan.
  5. Bake for 50–60 minutes, cool, then slice and serve.

Notes

Store at room temperature for up to 3 days or freeze for longer storage.
