Ingredients
  

Dough
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate ganache or your favorite chocolate filling

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheet with parchment.
  2. Cream butter and sugar until fluffy. Beat in eggs and vanilla.
  3. Mix in dry ingredients until just combined. Drop dough onto sheet.
  4. Make an indentation in each cookie. Bake for 10-12 minutes.
  5. Cool cookies, then fill with chocolate ganache.

Notes

Ensure not to overbake to keep cookies soft and chewy.
