  • 3 pieces ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chopped walnuts (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 10-cup bundt pan.
  2. Mix mashed bananas and melted butter. Add sugar, eggs, and vanilla; stir well.
  3. Whisk together baking soda, salt, and flour; gradually add to wet mixture, stirring until just combined.
  4. Fold in chocolate chips and walnuts (if using). Pour batter into pan and smooth top.
  5. Bake for 50-60 minutes until a toothpick comes out clean. Cool in pan 10 minutes, then invert onto wire rack.

Notes

For extra flavor, add a handful of chopped walnuts or chocolate chips on top before baking.
