Ingredients
  

Bananas
  • 3 large very ripe bananas
Butter
  • 125 g unsalted butter, melted
Sugar
  • 150 g soft light brown sugar
Eggs
  • 2 large free-range eggs
Vanilla Extract
  • 1 tsp vanilla extract
Flour
  • 250 g plain flour
Bicarbonate of Soda
  • 1 tsp bicarbonate of soda
Salt
  • ½ tsp salt
Chocolate Chips
  • 150 g chocolate chips, plus extra for sprinkling

Method
 

  1. Preheat oven to 180°C (160°C Fan). Grease a 2lb loaf tin.
  2. Mash bananas, then mix in melted butter, sugar, eggs, and vanilla.
  3. Sift in flour, bicarbonate, and salt; fold into wet ingredients.
  4. Stir in chocolate chips, pour into tin, sprinkle with extra chips.
  5. Bake for 55-65 minutes, cool before serving.

Notes

Use ripe bananas for best flavor and sweetness.
