Ingredients
  

Bananas
  • 3 medium ripe bananas approx. 12 oz
  • 2 large eggs
  • ¼ cup nut butter almond, peanut, cashew, or sunflower seed butter
  • cup granular sweetener monk fruit or brown sugar
  • 1 tsp vanilla extract
  • tsp sea salt
  • 1 ½ cups oat flour or preferred flour
  • ½ cup cocoa powder
  • 2 tsp baking powder
  • ¼ cup chocolate chips
  • ½ cup protein powder replace half of oat flour

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8-inch loaf pan with parchment or grease it.
  2. Mash bananas until smooth. Mix in eggs and nut butter until combined.
  3. Add sweetener, vanilla, and salt; whisk until smooth. Stir in flour, protein powder, cocoa, and baking powder.
  4. Fold in chocolate chips. Pour batter into pan and sprinkle remaining chips on top.
  5. Bake for 30–40 minutes. Cool in pan 15 minutes, then transfer to wire rack to cool completely.

Notes

Use ripe bananas for best flavor and sweetness.
