Method
- Preheat oven to 350°F (177°C). Grease and line loaf pan with parchment paper.
- Mix flour, cinnamon, nutmeg, baking powder, and salt (if using) in a bowl. Set aside.
- Chop walnuts into small pieces. Set aside.
- Peel and grate carrots. Set aside.
- Whisk sugar and eggs until just combined (about 45 seconds).
- Mix in olive oil and vanilla extract until combined.
- Add flour mixture in 2 batches, stirring until just combined.
- Add carrots and walnuts, mix well.
- Pour batter into the prepared loaf pan.
- Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean. Cool completely in the pan.
Notes
For a richer flavor, consider adding a cream cheese frosting after the loaf has cooled completely.
