Method
- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- Whisk together flour, baking soda, cinnamon, nutmeg, and salt in a large bowl.
- Combine sugar, oil, eggs, and vanilla extract in a separate bowl. Mix well.
- Add wet ingredients to dry ingredients and mix until just combined. Do not overmix.
- Stir in grated carrots and nuts (if using).
- Pour batter into the prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Frost with cream cheese frosting (recipe not included).
Notes
For extra flavor, toast the walnuts or pecans before adding them to the batter.
