Method
- Heat oil in a pot over medium heat. Cook onions until translucent, then add garlic until fragrant.
- Add the meat and cook until browned. Add peppers and cook until softened.
- Stir in tomato paste for 1 minute, then add tomatoes and cook for a few minutes.
- Add flour and cook for 1 minute. Pour in beef broth and season with salt, pepper, cumin, and chili. Bring to a boil, then reduce heat.
- Simmer covered for 2 hours, stirring occasionally. Add water if needed to prevent thickness.
- Serve warm, garnished with chopped cilantro.
Notes
Letting the stew simmer longer will result in tenderer meat.
