Carne Guisada

Ingredients
  

Oil
  • 2.5 tablespoons oil
  • 2 pounds chuck steak (cubed)
  • 1 large onion (chopped)
  • 1 large bell pepper (chopped)
  • 3 cloves garlic (minced)
  • 1 tablespoon tomato paste
  • 2 large tomatoes (diced)
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 cups beef broth

Method
 

  1. Heat oil in a pot over medium heat. Cook onions until translucent, then add garlic until fragrant.
  2. Add the meat and cook until browned. Add peppers and cook until softened.
  3. Stir in tomato paste for 1 minute, then add tomatoes and cook for a few minutes.
  4. Add flour and cook for 1 minute. Pour in beef broth and season with salt, pepper, cumin, and chili. Bring to a boil, then reduce heat.
  5. Simmer covered for 2 hours, stirring occasionally. Add water if needed to prevent thickness.
  6. Serve warm, garnished with chopped cilantro.

Notes

Letting the stew simmer longer will result in tenderer meat.
