Ingredients
  

Bananas
  • 3 pieces very ripe bananas about 1 1/2 cups mashed
  • 0.25 cups buttermilk
Dry ingredients
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.25 tsp salt
  • 0.125 tsp ground cinnamon
  • 0.125 tsp ground nutmeg
Wet ingredients
  • 0.5 cups butter softened
  • 0.75 cups light brown sugar
  • 2 eggs eggs
  • 0.5 tsp vanilla extract
Add-ins
  • 1 cups chopped pecans

Method
 

  1. Mash bananas and mix with buttermilk.
  2. Cream butter and brown sugar, then add eggs and vanilla.
  3. Combine dry ingredients and alternately add to wet mixture with mashed bananas.
  4. Fold in chopped pecans, pour into greased loaf pan, and bake at 350°F (175°C) for 60 minutes.
  5. Cool before slicing. Optional: substitute nuts or make mini loaves.

Notes

For best results, use very ripe bananas and ensure butter is softened.
