Brown Butter Sourdough Banana Bread

Ingredients
  

Butter
  • 113 g salted butter
Sugar
  • 180 g brown sugar
Eggs
  • 2 eggs at room temperature
Vanilla
  • 4 g vanilla extract
Bananas
  • 295 g mashed ripe bananas 2-3 large bananas
Sourdough discard
  • 140 g sourdough discard or substitute with Greek yogurt
Greek Yogurt
  • 115 g Greek yogurt or substitute with sour cream
Flour
  • 315 g all-purpose flour
Baking Soda
  • 5 g baking soda
Baking Powder
  • 2 g baking powder
Cinnamon
  • 3 g cinnamon
Salt
  • 3 g salt
Chocolate Chips
  • 200 g chocolate chips or chunks
Sea Salt
  • flaky sea salt for topping

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9×5” loaf pan.
  2. Brown the butter in a saucepan until golden, then cool slightly.
  3. Mix cooled butter with brown sugar, then add eggs and vanilla, mixing well.
  4. Stir in mashed bananas, sourdough discard, and Greek yogurt. Fold in dry ingredients and chocolate chips.
  5. Pour batter into the pan, top with sea salt, and bake for 60–65 minutes. Cool before slicing.

Notes

For best flavor, use ripe bananas and browned butter.
