Method
- Preheat oven to 400°F and fill a muffin pan with liners.
- Whisk together flour, baking soda, baking powder, and salt. Toss blueberries in flour mixture.
- Whisk together oil and sugar. Mix in vanilla, egg, sour cream, and mashed bananas.
- Gently fold dry ingredients into wet ingredients until flour streaks disappear.
- Distribute batter into muffin liners and bake at 400°F for 5 minutes. Reduce temperature to 350°F and bake for 15-20 more minutes.
- Transfer muffins to a wire rack to cool completely.
Notes
For best results, use overripe bananas and room temperature ingredients.
