Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
Coconut Oil
  • 1/3 cup melted coconut oil
Sweetener
  • 1/2 cup honey or maple syrup
Eggs
  • 2 large large eggs
Vanilla
  • 1 teaspoon vanilla extract
Lemon Zest & Juice
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
Baking Soda
  • 1 teaspoon baking soda
Salt
  • 1/4 teaspoon salt
Gluten-Free Flour
  • 1 1/2 cups gluten-free all-purpose flour
Blueberries
  • 1 cup fresh or frozen blueberries

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas and melted coconut oil until combined.
  3. Add honey, eggs, vanilla, lemon zest, and juice; stir until smooth.
  4. Whisk together flour, baking soda, and salt; fold into wet mixture.
  5. Gently fold in blueberries, pour into pan, and bake 50-60 mins.

Notes

Use ripe bananas for best flavor and mash well.
