Ingredients
  

Cake
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1.5 cups brown sugar
  • 0.75 cups vegetable oil
  • 4 cups shredded carrots
  • 4 eggs (at room temperature)
Frosting
  • 1 cream cheese (softened)
  • 0.25 cup butter (softened)
  • 0.5 cup icing sugar
  • 1 tsp lemon juice

Method
 

  1. Grease a 9”x13” glass pan.
  2. Preheat the oven to 365F.
  3. Shred carrots.
  4. Combine dry ingredients.
  5. Beat eggs for 2-3 minutes.
  6. Add brown sugar and mix.
  7. Slowly pour oil and mix.
  8. Add dry ingredients and mix at a slow speed.
  9. Add shredded carrots and stir.
  10. Bake at 365F for 30-40 minutes.
  11. Cool completely before frosting.

Notes

For a richer flavor, consider adding chopped walnuts or raisins to the batter.
