Method
- Grease a 9”x13” glass pan.
- Preheat the oven to 365F.
- Shred carrots.
- Combine dry ingredients.
- Beat eggs for 2-3 minutes.
- Add brown sugar and mix.
- Slowly pour oil and mix.
- Add dry ingredients and mix at a slow speed.
- Add shredded carrots and stir.
- Bake at 365F for 30-40 minutes.
- Cool completely before frosting.
Notes
For a richer flavor, consider adding chopped walnuts or raisins to the batter.
