Bananas
  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1.5 cups whole wheat flour
  • 1/2 cup chopped nuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas and melted coconut oil in a bowl.
  3. Add honey, vanilla, and eggs; stir until combined.
  4. Combine dry ingredients and gradually mix into wet ingredients.
  5. Fold in nuts or chocolate chips if desired, then pour batter into pan.
  6. Bake for 50-60 minutes, cool, then serve.
