Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch salt
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1.5 cups gluten-free all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup chopped walnuts (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas and melted coconut oil.
  3. Add vanilla, baking soda, and salt; stir well.
  4. In another bowl, whisk together flour and baking powder, then combine with wet ingredients.
  5. Fold in walnuts if using, pour batter into pan, and bake 50-60 minutes.
