Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, oil, vanilla, and sugar.
  3. Add eggs one at a time, mixing well.
  4. Stir in baking soda, salt, then fold in flour.
  5. Pour batter into pan and bake for 60-65 minutes.
  6. Cool in pan 10 minutes, then transfer to wire rack.

Notes

Use ripe bananas for best flavor and sweetness.
