Ingredients
  

Dried ingredients
  • 2 pieces ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/4 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix mashed bananas, honey, and applesauce in a large bowl.
  3. Combine dry ingredients in another bowl.
  4. Gradually add dry to wet, fold in nuts or chips if desired.
  5. Spoon batter into muffin tin, fill 2/3 full.
  6. Bake 18-20 minutes, cool before serving.

Store muffins in an airtight container for freshness.
