Dough
  • 0.5 cup unsalted butter at room temperature
  • 1 cup granulated white sugar
  • 1 cup mashed bananas
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground clove
  • 1 cup chopped pecans

Method
 

  1. Preheat oven to 360°F (180°C). Line a baking sheet with parchment.
  2. Whisk butter and sugar until fluffy. Add mashed bananas, egg, vanilla, and mix.
  3. Stir in flour, baking soda, cinnamon, nutmeg, and cloves until combined. Fold in pecans.
  4. Drop batter onto sheet with 2-inch spacing. Shape into rounds if desired.
  5. Bake for 12-13 minutes until golden. Cool on wire rack. Enjoy!

Notes

For round cookies, gently shape batter with palms before baking.
