  • 3 pieces ripe bananas, mashed
  • 0.5 cup unsweetened applesauce
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, mash bananas. Mix in applesauce, oil, eggs, sugar, and vanilla.
  3. Whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. Combine wet and dry ingredients; do not overmix. Pour into pan.
  5. Bake for 50-60 minutes. Cool before slicing.

Notes

Using ripe bananas enhances flavor and sweetness.
