Method
- Mix flour, baking soda, salt, and optional cinnamon.
- In a large bowl, mash bananas. Stir in eggs, oil, sugar, and vanilla.
- Combine wet and dry ingredients until just mixed.
- Pour batter into a prepared loaf pan.
- Bake at 350°F (175°C) for 50–60 minutes until a toothpick comes out clean.
- Cool for 10 minutes before transferring to a wire rack.
Notes
Use very ripe bananas for best flavor and sweetness.
