  • 3 pieces very ripe bananas (mashed)

  • 1/2 cup vegetable oil or melted butter
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon (optional)
  • 1/2 cup chopped nuts (optional)

Method
 

  1. Mix flour, baking soda, salt, and cinnamon.
  2. In a large bowl, mash bananas and stir in eggs, oil, sugar, and vanilla.
  3. Combine wet and dry ingredients until just mixed.
  4. Pour batter into a loaf pan and bake for 50–60 minutes.
  5. Cool for 10 minutes before transferring to a wire rack.
