Ingredients
  

Wet ingredients
  • 1/4 cup canola oil
  • 1/4 cup butter (softened)
  • 1 cup granulated sugar
  • 2 large very ripe bananas (mashed)
  • 2 large eggs
  • 1 teaspoon vanilla
Dry ingredients
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup sour cream

Method
 

  1. Preheat oven to 325°F (160°C). Grease two loaf pans and set aside.
  2. Mix oil, butter, and sugar until combined. Add eggs, vanilla, and bananas; mix until smooth.
  3. Stir in dry ingredients and sour cream until batter forms. Pour into pans.
  4. Bake for 50-60 minutes until a toothpick comes out clean. Cool before slicing.

Notes

Use very ripe bananas for best flavor and sweetness.
