Method
- Preheat oven to 375° F. Prepare muffin tin.
- Combine flour, oats, brown sugar, baking powder, baking soda, salt and spices in a large bowl.
- Combine milk, eggs, oil and vanilla in a separate bowl.
- Add milk mixture to flour mixture. Stir until mostly mixed.
- Add carrots and apples. Fold until all flour is mixed.
- Place in muffin tins.
- Bake for 15-18 minutes.
- Cool for 2-3 minutes, remove from tin and cool on a rack.
Notes
For extra flavor, add a handful of chopped nuts or dried fruit to the batter.
