Ingredients
  

Dry Ingredients
  • 1.5 cups white wheat flour
  • 0.75 cup brown sugar
  • 0.5 cup oats (old fashioned or 1 minute oats)
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground nutmeg
Wet Ingredients
  • 2 eggs
  • 0.5 cup milk
  • 0.25 cup oil (vegetable or canola)
  • 1 teaspoon vanilla
Produce
  • 1 cup grated apple (1-2 apples)
  • 1 cup grated carrot (2-3 carrots)

Method
 

  1. Preheat oven to 375° F. Prepare muffin tin.
  2. Combine flour, oats, brown sugar, baking powder, baking soda, salt and spices in a large bowl.
  3. Combine milk, eggs, oil and vanilla in a separate bowl.
  4. Add milk mixture to flour mixture. Stir until mostly mixed.
  5. Add carrots and apples. Fold until all flour is mixed.
  6. Place in muffin tins.
  7. Bake for 15-18 minutes.
  8. Cool for 2-3 minutes, remove from tin and cool on a rack.

Notes

For extra flavor, add a handful of chopped nuts or dried fruit to the batter.
