  • 2 c sugar or use 1 c. sugar and 1 c. brown sugar
  • 1.5 c vegetable or canola oil
  • 4 large eggs
  • 2.5 c shredded carrots approx. 4 large carrots
  • 1 c crushed pineapple drained
  • 2 c all-purpose flour
  • 2 tsp baking powder
  • 1.5 tsp baking soda
  • 1 tsp salt
  • 2 tsp ground cinnamon
  • 0.75 c chopped pecans or walnuts optional
Frosting
  • 8 oz softened cream cheese
  • 1 c softened butter 2 sticks
  • 1 tsp vanilla extract
  • 3 c powdered sugar 3 - 3 1/2 c.
  • 0.25 tsp salt

Notes

For an extra touch, sprinkle chopped pecans on top of the frosting.
