Method
- Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
- Mash bananas in a large bowl. Add eggs and whisk until combined.
- Mix in sugar and melted butter (if using).
- Stir in flour, vanilla, cinnamon, and salt. Gently fold until just combined.
- Pour batter into pan and bake for 50 minutes. Cool before slicing.
Notes
This banana bread is best enjoyed fresh but can be stored for a day or two.
