Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. Mash bananas in a large bowl. Add eggs and whisk until combined.
  3. Mix in sugar and melted butter (if using).
  4. Stir in flour, vanilla, cinnamon, and salt. Gently fold until just combined.
  5. Pour batter into pan and bake for 50 minutes. Cool before slicing.
